This meal was better than any chicken meal prep I made... and I love chicken!
Ingredients
16 oz ground beef,2 bell peppers, 1 small cabbage head, Apple cider vinegar, 1 egg, 1 cup uncooked rice, salt (to taste), pepper (to taste), Olive oil,
RICE:
I use a 1 cup rice to 2 cups water ratio. I have a rice cooker, so if you do not have one, please look up the pot method for cooking rice!
CABBAGE:
1) Chop or shred your cabbage into slices into thin/small slices
2) Dice 2 bell peppers into small sizes
3) Oil a pot with olive oil, and place bell peppers into the pot once heated
4) Season your peppers with desired seasons (salt, pepper, onion powder)
5) Place cabbage into pot and gradually stir to mix around seasoning and pepper
6) Allow cabbage to cook for 10 minutes, then add apple cider vinegar (for every 2.5 lbs of cabbage : 1 tablespoon of apple cider vinegar)
7) Allow cabbage to cook until soft yet crunchy.
GREEN ONION MEATBALLS
1) Season ground beef with salt, pepper, and other desired seasonings. Add an egg for better binding of the meatballs and chopped green onions for flavor
2) Roll ground beef into meatballs, with the diameter of a half-dollar coin (should make 14-16 meatballs.
3) Preheat a skillet or pot with olive oil, and place meatballs in a counterclockwise position, starting from the outside.
4) Let meatballs cook until brown on each side, about 4-5 minutes on each side
5) Serve the dish & meal prep the rest!!
